What foods do you miss since going vegan? One thing I used to love as a special comfort food snack (especially for lunch) was fish fingers.

However, I recently discovered how to make really tasty tofu based alternatives. Fish(less) finger sarnies here I come. These can also be made gluten free, if you choose an appropriate breadcrumb.

I used some store-cupboard staples & a block of tofu (frozen, defrosted & pressed to give a meatier texture). 

Recipe:

🐟Block of tofu, previously frozen & pressed to remove remaining moisture

🐟 Juice of one lemon

🐟 Noori sheet – shredded

🐟 Onion powder, Salt & Pepper

🐟 Olive oil* (depending on your cooking method, you could use plant milk)

🐟 Breadcrumbs with tumeric & seasoning

*I used Oil because I wanted to grill the fingers. If you are frying in oil, you may want to use milk for bread crumbing instead.

Method:

1. Make marinade:
Shred or rip up the noori sheet into pieces, add lemon juice, & seasonings. Stir & leave to infuse.

2. Tofu Fingers:
Once tofu is pressed, cut into fingers. Be careful as pressed, defrosted tofu is more crumbly.

3. Marinade Tofu:
Place the tofu in a dish. Using a sieve to remove the noori bits, pour the marinade over the tofu.
Leave whilst you prepare the breadcrumbing process.

Preparation:


Using three plates, put oil on one, breadcrumbs on the second & the third is for assembled fingers. This is your assembly line 😉

4. Bread crumbing:
Take tofu fingers out of marinade & drain each one on kitchen paper (or more environmentally friendly, a towel).

Take one finger, gently coat in oil & then crumbs until all have been crumbed. I like to double crumb mine, so I repeat the process a second time.

5. Grill – they are prone to burning (as shop bought fingers have an oilier coating, so keep an eye on them).

* Remember, If you prefer to shallow fry your fingers,  use plant milk for breadcrumbing rather than oil. 👍🏻

I served mine on a bap with lots of homegrown Beansprouts & baby spinach (+ vegan ketchup).
