Aduki Bean Curry

This was one of my favourite detox meals from before Christmas.

I thought I’d try Adzuki Beans & Googled some recipes. There were a lot of vegan bean curry recipes ๐Ÿ‘๐Ÿป๐Ÿ‘๐Ÿป๐Ÿ‘๐Ÿป๐Ÿ‘๐Ÿป so I amended them to make them detox & vegan friendly.

This recipe contains allergy free ingredients including: gluten free & soya free


๐ŸŒถ๏ธ2 cups dry adzuki beans soaked overnight
๐ŸŒถ๏ธ 2 tbs avocado oil for sautรฉing
๐ŸŒถ๏ธ 6 garlic cloves minced
๐ŸŒถ๏ธ 1 tbs ginger root minced
๐ŸŒถ๏ธ Tin of chopped tomatoes or paste
(If chopped blend down to a puree)
๐ŸŒถ๏ธ Blended raw cashews or coconut milk (not too much coconut milk as it will make the curry too watery).
๐ŸŒถ๏ธ 1 tbs cumin seeds
๐ŸŒถ๏ธ 1 tbs ground coriander
๐ŸŒถ๏ธ 1 tspn ground turmeric
๐ŸŒถ๏ธ 1/2 tspn red chili flakes
๐ŸŒถ๏ธ 1/4 cup chopped fresh cilantro
๐ŸŒถ๏ธ 1 lime juiced
๐ŸŒถ๏ธ Seasoning


๐Ÿฅ„Soak adzuki beans in water overnight then cook until they are tender (I cook mine in homemade vegetable stock).

๐Ÿฅ„In a large frying pan, saute ginger and garlic in avocado oil until turning golden.

๐Ÿฅ„Add Cumin seeds to slightly toast.

๐Ÿฅ„Add tomatoes, spices, cashew creme & adzuki beans.

๐Ÿฅ„Turn heat to high, bring to a boil, cover & reduce heat to med-low and simmer for 10 minutes.

๐Ÿฅ„Stir in cilantro and lime juice.

๐Ÿฅ„Season to taste. I added extra chilli as mine was a bit mild.

๐Ÿฅ„ I served mine with Brown Rice
