This was one of my favourite detox meals from before Christmas.
I thought I’d try Adzuki Beans & Googled some recipes. There were a lot of vegan bean curry recipes ๐๐ป๐๐ป๐๐ป๐๐ป so I amended them to make them detox & vegan friendly.
This recipe contains allergy free ingredients including: gluten free & soya free
Recipe:
๐ถ๏ธ2 cups dry adzuki beans soaked overnight
๐ถ๏ธ 2 tbs avocado oil for sautรฉing
๐ถ๏ธ 6 garlic cloves minced
๐ถ๏ธ 1 tbs ginger root minced
๐ถ๏ธ Tin of chopped tomatoes or paste
(If chopped blend down to a puree)
๐ถ๏ธ Blended raw cashews or coconut milk (not too much coconut milk as it will make the curry too watery).
๐ถ๏ธ 1 tbs cumin seeds
๐ถ๏ธ 1 tbs ground coriander
๐ถ๏ธ 1 tspn ground turmeric
๐ถ๏ธ 1/2 tspn red chili flakes
๐ถ๏ธ 1/4 cup chopped fresh cilantro
๐ถ๏ธ 1 lime juiced
๐ถ๏ธ Seasoning

Instructions
๐ฅSoak adzuki beans in water overnight then cook until they are tender (I cook mine in homemade vegetable stock).
๐ฅIn a large frying pan, saute ginger and garlic in avocado oil until turning golden.
๐ฅAdd Cumin seeds to slightly toast.
๐ฅAdd tomatoes, spices, cashew creme & adzuki beans.
๐ฅTurn heat to high, bring to a boil, cover & reduce heat to med-low and simmer for 10 minutes.
๐ฅStir in cilantro and lime juice.
๐ฅSeason to taste. I added extra chilli as mine was a bit mild.
๐ฅ I served mine with Brown Rice
