If asked to conjure up an image of Ireland & Irish food, a whole range of delicious dishes come to mind. One of the most popular of course, is Irish Stew.
For this recipe, I’ve used vegan sausages, to replace the traditional mutton (but you could use any meat replacement/Seitan etc).
Having researched original recipes where root vegetables, potatoes & cheap cuts of meat were cooked until tender to produce a nutritious low cost meal, it’s clear Guinness isn’t a traditional ingredient.
However, the addition of this dense dark drink, not only enhances the romantic idea of Ireland, but adds an amazing richness; perfect for Saint Patrick’s Day ☘️
Ingredients:
☘️ 8 large vegan sausages (approx 300g) cut into chunks
☘️ Olive or avocado oil for sautéing
☘️ 4-5 garlic cloves, minced
☘️ 1 large onion, chopped (1 1/2 to 2 cups)
☘️ 4 cups vegan ‘beef’ stock (I used Miso & Marmite)
☘️ 2 cups water
☘️ 1 cup Guinness (yes it’s vegan)
☘️ 1 cup vegan red wine
☘️ 2 TBS tomato paste
☘️ 1 TBS dried thyme
☘️ 1 TBS vegan Worcestershire sauce
☘️ 2 bay leaves
☘️ 2-3 large potatoes, peeled, cut into small cubes (about 4 cups)
☘️ 3 to 4 carrots or parsnips, cut into slices or small pieces (2 cups)
☘️ 1/2 TSP freshly ground black pepper
☘️ 2 TBS chopped fresh parsley (for garnishing)

Instructions:
1) Brown the Sausage pieces slightly, with the garlic & sliced onions. Make sure the garlic doesn’t burn only softens.
2) Add all other ingredients (apart from parsley) & bring to a simmer.
3) Cook until all the vegetables are soft approx 3/4 – 1 hour. This recipe improves when reheated the next day or cooked for longer to reduce further. *
* Alternatively put in a oven proof dish & cook as you would a casserole.
Suitable for freezing.
Dumplings:
I added Dumplings to mine & cut the potato quantity by 1/3.
