Ingredients:
- 200g walnuts
- 1 medium onion (about 100g), finely chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon soy sauce
- 1 tablespoon lemon juice
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper, to taste
- 50ml vegetable stock
Method:
- Toast the Walnuts: Preheat your oven to 180°C (350°F).Spread the walnuts on a baking tray and toast them

- Add the finely chopped onion and sauté until soft and translucent, about 5-7 minutes.

- Blend the Ingredients: In a food processor, combine the toasted walnuts, sautéed onion and garlic mixture, soy sauce, lemon juice, thyme, rosemary, salt, and pepper.
- Pulse until you get a coarse mixture.
- Gradually add the vegetable stock while blending until you achieve a smooth, spreadable consistency.
- Seasoning: Taste and adjust the seasoning as needed. You can add more salt, pepper, or lemon juice to your preference.
- Serve: Transfer the walnut pâté to a serving dish and refrigerate for at least an hour to let the flavours meld.
- Serve with crackers, bread, or as a part of a vegan cheeseboard.
