This was one of my favourite detox meals from before Christmas.
I thought I’d try Adzuki Beans & Googled some recipes. There were a lot of vegan bean curry recipes 👏🏻👏🏻👏🏻👏🏻 so I amended them to make them detox & vegan friendly.
This recipe contains allergy free ingredients including: gluten free & soya free
Recipe:
🌶️2 cups dry adzuki beans soaked overnight
🌶️ 2 tbs avocado oil for sautéing
🌶️ 6 garlic cloves minced
🌶️ 1 tbs ginger root minced
🌶️ Tin of chopped tomatoes or paste
(If chopped blend down to a puree)
🌶️ Blended raw cashews or coconut milk (not too much coconut milk as it will make the curry too watery).
🌶️ 1 tbs cumin seeds
🌶️ 1 tbs ground coriander
🌶️ 1 tspn ground turmeric
🌶️ 1/2 tspn red chili flakes
🌶️ 1/4 cup chopped fresh cilantro
🌶️ 1 lime juiced
🌶️ Seasoning

Instructions
🥄Soak adzuki beans in water overnight then cook until they are tender (I cook mine in homemade vegetable stock).
🥄In a large frying pan, saute ginger and garlic in avocado oil until turning golden.
🥄Add Cumin seeds to slightly toast.
🥄Add tomatoes, spices, cashew creme & adzuki beans.
🥄Turn heat to high, bring to a boil, cover & reduce heat to med-low and simmer for 10 minutes.
🥄Stir in cilantro and lime juice.
🥄Season to taste. I added extra chilli as mine was a bit mild.
🥄 I served mine with Brown Rice
