10 minute prep & 10-12 minutes cooking in the airfryer at 180°c (depending on size)

Air Fryer Vegan Scones

Ingredients:

🍪200g self-raising flour (1⅔ cups)
🍪 1 tsp baking powder
🍪 Pinch of salt
🍪 1½ tbsp sugar
🍪 35g vegan butter or margarine (I subbed 2 tbsp olive oil and it worked perfectly)
🍪 120ml plant milk* (½ cup), plus extra for brushing
🍪 1 tsp lemon juice or apple cider vinegar
🍪 ½ tsp vanilla extract (optional)

* I added a sprinkle of tumeric for colour in the milk wash

Method:
1. In a small jug, mix the plant milk with the lemon juice and leave for 5 minutes.

2. In a bowl, combine the flour, baking powder, salt, and sugar.

3. Rub the vegan butter into the flour until the mixture resembles breadcrumbs.

4. Stir in the vanilla if using, then gradually add the milk mixture until a soft dough forms.

5. Lightly flour a surface and gently pat the dough to about 3cm thick. Cut into 4–6 rounds.

6. Preheat the air fryer to 180°C for 2–3 minutes.

7. Line the air fryer basket with perforated baking paper or a reusable liner. Place the scones slightly apart and brush the tops with plant milk.

8. Air fry at 180°C for 10–12 minutes until risen and golden on top.

9. Cool slightly before serving with jam, vegan butter, or coconut cream.

Optional Additions:
