Devils on Horseback

Even in my pre-vegan days, I was never one for ‘Pigs in Blankets’ (sausages wrapped in bacon) & have always preferred ‘Devils on Horseback’ (Prunes or Dates stuffed & wrapped in bacon 🥓).

The vegan version is delicious & so easy …

Devils on Horseback

Ingredients:

I prefer Mejool dates (although traditionally prunes are used) you can leave them as is, or stuff with cheeze, sliced almonds or walnuts. I’ve used walnuts for texture.

For ‘bacon’ wrap
Aubergine cut into thin strips (the thinner the better, without them breaking).

Marinade
🐴 1 tbs Maple Syrup
🐴 2 tbs Avocado or light olive oil
🐴 2 tbs Soy sauce
🐴 2tbs Tomato puree
🐴 1 tsp Garlic powder
🐴 1 tsp Sweet Smoked Paprika
🐴 Pinch of Salt
🐴 Pinch Black pepper

Method:

👉🏻Marinade the aubergine strips for min 10 mins

👉🏻Preheat oven Gas mark 200°c / 400°F

👉🏻For aubergine, bake the aubergine for 5 mins or until soft & pliable & then wrap carefully around the dates.

👉🏻 Return to the oven & bake for 20 mins, but check regularly in case your oven cooks quicker
