When you need something hearty but fast, this breakfast wrap hits the spot. It’s a smart way to use up cooked potatoes or odds and ends from the fridge, with the air fryer doing most of the work.

- Great way to use cooked white or sweet potatoes or vegetables.
- Add nutritional yeast, avocado or hummus for extra flavour.
- If you make too much hash, store in fridge for up to 3 days – reheat in the air fryer or pan.

Ingredients:
- 100g (⅔ cup) cooked potatoes or sweet potatoes, chopped
- ½ small red pepper, diced
- ¼ red onion, finely chopped
- ½ tsp smoked paprika or cumin
- 1 tsp olive oil
- Pinch of salt and black pepper
- Optional: 50g (⅓ cup) tofu or vegan sausage, crumbled
- 1 tortilla or flatbread (approx. 60–70g)
- Handful of fresh spinach or baby greens
Method:
- In a bowl, toss the chopped potatoes, pepper, onion, spices, oil, and optional tofu or vegan sausage until evenly coated.
- Place mixture in the air fryer basket and cook at 190°C (375°F) for 8–10 minutes, shaking halfway through.
- Once golden and crisp, warm your tortilla briefly in a dry pan or microwave.
- Fill with spinach or greens, spoon in the hash, and add any extra toppings.
- Wrap up and enjoy warm, or foil-wrap for an on-the-go breakfast.
