Move over Pad Thai – Pad Kee Mao (Drunken Noodles) are here!

Ingredients:
- 200g extra-firm tofu, pressed and cubed
- 200g wide rice noodles (fresh or soaked dried)
- 2 tbsp neutral oil
- 3 cloves garlic, finely chopped
- 1–2 red chillies, finely sliced (adjust to taste)
- ½ medium onion, sliced
- 1 medium red pepper, sliced
- 100g mangetout or sugar snap peas or similar
- Handful of Thai basil leaves
Sauce
- 2 tbsp vegan fish sauce
- 2 tbsp light soy sauce (or tamari)
- 1 tbsp dark soy sauce
- 1 tbsp brown sugar (or coconut sugar)
- 1 tbsp lime juice
- 2 tbsp water
- Optional: Chilli to give it a bit of heat

I sprinkle with fresh coriander and crushed peanuts for texture.
