Move over Pad Thai – Pad Kee Mao (Drunken Noodles) are here!

Ingredients:

  • 200g extra-firm tofu, pressed and cubed
  • 200g wide rice noodles (fresh or soaked dried)
  • 2 tbsp neutral oil
  • 3 cloves garlic, finely chopped
  • 1–2 red chillies, finely sliced (adjust to taste)
  • ½ medium onion, sliced
  • 1 medium red pepper, sliced
  • 100g mangetout or sugar snap peas or similar
  • Handful of Thai basil leaves


Sauce

  • 2 tbsp vegan fish sauce
  • 2 tbsp light soy sauce (or tamari)
  • 1 tbsp dark soy sauce
  • 1 tbsp brown sugar (or coconut sugar)
  • 1 tbsp lime juice
  • 2 tbsp water
  • Optional: Chilli to give it a bit of heat

I sprinkle with fresh coriander and crushed peanuts for texture.
