Here’s a delicious vegan quiche recipe for you to try. It’s made with a silken tofu sauce (see my other recipe for bechamel sauce if you prefer not to use tofu). If you make your own pastry, you can also ensure its Gluten Free.

Caramelised Leek Quiche

Ingredients:

Silken Tofu Sauce (Blend together the following):

šŸ„„ Carton of Silken Tofu

šŸ„„ Two tablespoons of Nutritional Yeast

šŸ„„ Dash of mustard (depending on strength)

šŸ„„ Salt & Black Pepper

šŸ„„ Dash of Plant Milk

šŸ„„ 2 teaspoons cornflour

šŸ„„ Optional extra herbs

Vegetables (caramelise)

šŸ„„ Two-three leeks (washed)

šŸ„„ Half a red pepper (sliced)

šŸ„„ Par-boiled baby broad beans

Pastry

šŸ„„ Make your own or use shop bought short crust pastry.

Method:

  1. Blend up the sauce & set aside
  2. Caramelise the leeks & peppers
  3. Par-boil the road beans to soften slightly
  4. Line a flan tray with the pastry
  5. Add all of the vegetables to the silken tofu sauce. Mix well.
  6. Then pour into the pastry lined flan tray. Level up the mixture.
  7. Decorate with slices of tomato if required.
  8. Bake in the oven for 20-30 minutes until set.

Note: I find that the sauce & vegetables require seasoning well. Sometimes I add extra Mediterranean herbs. Enjoy
