I had a bag of edamame, homegrown chard, spirulina, mint and lemon to use up, so I blended them into a bright protein-packed dip!

It’s fresh earthy and super simple to make.

It would also make a
great salad at this stage!

Ingredients:

  • 1 cup cooked edamame
  • A handful of chard lightly steamed and squeezed dry
  • ½ tsp spirulina
  • Juice of ½ small lemon
  • A few mint leaves
  • 1 tbsp olive oil or tahini
  • Salt and pepper to taste
  • Optional small garlic clove
  • Splash of water to loosen if needed

Method:

  1. Blend until smooth and adjust to taste
  2. Great with crackers flatbreads or raw veg
