
I had a bag of edamame, homegrown chard, spirulina, mint and lemon to use up, so I blended them into a bright protein-packed dip!
It’s fresh earthy and super simple to make.

Ingredients:
- 1 cup cooked edamame
- A handful of chard lightly steamed and squeezed dry
- ½ tsp spirulina
- Juice of ½ small lemon
- A few mint leaves
- 1 tbsp olive oil or tahini
- Salt and pepper to taste
- Optional small garlic clove
- Splash of water to loosen if needed
Method:
- Blend until smooth and adjust to taste
- Great with crackers flatbreads or raw veg

Chard adds vitamins A, C and K, plus magnesium and potassium. Lightly steaming the chard helps reduce oxalates, which can block mineral absorption, making its nutrients more available.
