Ingredients:
- 1 cup red lentils, rinsed
- 1 small onion, finely chopped
- 1 tsp garlic granules
- 1 tsp ground ginger
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/2 tsp mild chilli powder (optional)
- 400 ml tin chopped tomatoes
- 400 ml coconut milk or water
- Salt to taste
- Juice of 1/2 lemon
- Fresh coriander (optional)
METHOD
- Gently sauté the onion in a little oil until soft.
- Add garlic granules, ground ginger and all the spices. Stir briefly until fragrant.
- Add lentils, tomatoes and coconut milk. Stir well.
- Simmer uncovered for 20 to 25 minutes, stirring occasionally, until creamy and tender.
- Season with salt and lemon juice.
- Finish with coriander if using and serve warm.
- Serve with rice, flatbreads, or as a thick stew on its own.
This dhal thickens as it cools. Loosen with a splash of water when reheating and it’s perfect again.
