Ingredients:

  • 1 cup red lentils, rinsed
  • 1 small onion, finely chopped
  • 1 tsp garlic granules
  • 1 tsp ground ginger
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/2 tsp mild chilli powder (optional)
  • 400 ml tin chopped tomatoes
  • 400 ml coconut milk or water
  • Salt to taste
  • Juice of 1/2 lemon
  • Fresh coriander (optional)


METHOD

  1. Gently sauté the onion in a little oil until soft.
  2. Add garlic granules, ground ginger and all the spices. Stir briefly until fragrant.
  3. Add lentils, tomatoes and coconut milk. Stir well.
  4. Simmer uncovered for 20 to 25 minutes, stirring occasionally, until creamy and tender.
  5. Season with salt and lemon juice.
  6. Finish with coriander if using and serve warm.
  7. Serve with rice, flatbreads, or as a thick stew on its own.

This dhal thickens as it cools. Loosen with a splash of water when reheating and it’s perfect again.
