Gluten Free – No added Sugar – No added Fat

Here’s a recipe for Vegan Mincemeat I made last year & we loved.

I held off making it alcohol free (the alcohol is cooked off during the process, leaving that lovely brandy marinated fruit flavour ๐Ÿ˜‰).

However, I have made alcohol free mincemeat before, with cranberry or pomegranate juice to replace the alcohol quantity & it is nice too should you prefer.

So here’s the recipe, which is actually rather good ๐Ÿ‘๐Ÿป

Ingredients:

๐Ÿคถ๐Ÿป75g Mejool dates, chopped small
๐Ÿคถ๐Ÿป75g Sultanas
๐Ÿคถ๐Ÿป150g Raisins
๐Ÿคถ๐Ÿป75g dried Cranberries
๐Ÿคถ๐Ÿป6 dried Figs, chopped
๐Ÿคถ๐Ÿป1-2 Apples, peeled and grated
๐Ÿคถ๐Ÿป Juice of half of a Lemon
๐Ÿคถ๐ŸปJuice and zest of 1/2 Orange
๐Ÿคถ๐Ÿป90mL Brandy or other

Your choice of seasonal spices. I used:
๐Ÿคถ๐Ÿป1tsp Garam Masala as I don’t have ground cloves & allspice; it surprisingly worked well ๐Ÿค—
๐Ÿคถ๐Ÿป1/4tsp ground nutmeg
๐Ÿคถ๐Ÿป1 tsp cinnamon

Method:

Put all ingredients in a saucepan & simmer down for 5-10mins, until the liquid has been absorbed & the fruit plump.

* If you want a more boozy mincemeat, add the alcohol after you have heated the ingredients.

Allow it to cool a little (as to not burn yourself) and then add to sterilised jam jars with good lids.

Once cool store in cool cupboard it fridge. Once opened, store in fridge.

Mine lasted a fortnight; not because of shelf life, but because we’d eaten it all. It may well last longer.
